Gelato, made from scratch
Every single recipe at Elis is developed and calculated in-house, made up of individual ingredients, and produced in small batches. Unlike regular ice cream, gelato contains less fat and less air, resulting in a more intense flavor in every scoop.
We don't use pre-made ice cream mixes. We create every single flavor ourselves, from scratch, one ingredient at a time. No shortcuts, no compromises.

Every single ingredient is carefully balanced in terms of flavor and texture. We know each ingredient by name and exactly why it’s included.
No alcohol, no pork gelatin.
Organic milk and cream
We use organic milk and cream from Danish producers. In gelato, dairy products aren’t just a background ingredient—they form the very foundation of every single flavor we make.
Chocolate, fruit, and much more
Our chocolate comes from Valrhona, trusted by the world’s best pastry chefs. Our hazelnuts are IGP-certified from Piedmont. For our fruit sorbets, we use purees made from a single variety of fruit, crafted from 100% fruit grown with a focus on flavor—such as our lemon sorbet made from Femminello lemons from Syracuse.
